Why do you get offended by the word 'paki'?

I disagree. During WW2, the Japanese were called Japs. According to you, it would be alright to call them that know, but because it was used in a derrogatory way, I personally feel that it would not be acceptable. It is the same with Pakistan. It is hard for people on the outside to understand why people do not like to be called certain things.
